Pumpkin, pumpkin, pumpkin... The fall always means yummy pumpkin treats. Finding healthy pumpkin treats is hard sometimes. I mean, until today, I don't think I would consider any of my baked pumpkin goods 'healthy'. But today I may have found something close. The recipe I found on pinterest calls for while wheat flour, coconut oil, and honey. No added sugar, butter, or vegetable oils! The result...delicious pumpkin muffins!
*I did use Kind Arthur's all purpose flour because we didn't have whole wheat.

Thanks to an awesome deal at the store, I got 3 racks of ribs to somehow learn how to cook. I had never made ribs before in my life! Last month I bbq'ed one of the racks. It came out okay, but not as 'fall off the bone'as I had hoped.
The second rack was cooked tonight. I decided to bake this rack. I marinated the ribs for an hour and a half in one bottle of bbq sauce and 8 (bbq sauce) bottles of water. After cooking, I placed in the oven for 40 minutes to bake. Result...FALL OFF THE BONE delicious!
Next month I will try the slow cooker!
A recent favorite among the kids and myself are French Toast Eggs! Just mix a couple of eggs (or egg whites for me), a couple tablespoons of milk, a couple teaspoons of cinnamon and then scramble or make omelet style. Add some honey as a topping and you have a yummy breakfast!
Mud pudding! The kids love it. Pudding (usually chocolate, but we used vanilla). Crushed Oreos on top. A few gooey, I mean gummy, worms! Hide some in the pudding!!
