Paleo pumpkin pancakes

Pumpkin pancakes are probably one of my favorite breakfast items. It's like dessert...for breakfast! I'm not a health food junkie. When there are so many 'diets' out there, it's easier to just stay away from the things you know are junk. Anyway, I gave Paleo Pumpkin pancakes a try today and I'd say I'm mixed on my opinion of them.

Ingredients:
4 eggs
1/2 cup canned pumpkin
1 tsp vanilla
2 tbsps maple syrup (I just used honey. Can use bananas, if you want)
1 tsp pumpkin pie spice (I just used a dash of ginger, cloves, and nutmeg)
1/4 tsp cinnamon
1/4 tdp baking soda
2 tbsps coconut oil

Mix that all together and cook away! The batter came out runny, but the pancakes fluffed up a little after cooking. Basically, I'd say it looks like a pumpkin omelet. I like omelets, though, so I'm not knocking it.

Pumpkin muffins

Pumpkin, pumpkin, pumpkin... The fall always means yummy pumpkin treats.  Finding healthy pumpkin treats is hard sometimes. I mean, until today, I don't think I would consider any of my baked pumpkin goods 'healthy'. But today I may have found something close. The recipe I found on pinterest calls for while wheat flour, coconut oil, and honey. No added sugar, butter, or vegetable oils!  The result...delicious pumpkin muffins!

*I did use Kind Arthur's all purpose flour because we didn't have whole wheat.

Ribs!

Thanks to an awesome deal at the store, I got 3 racks of ribs to somehow learn how to cook. I had never made ribs before in my life! Last month I bbq'ed one of the racks. It came out okay, but not as 'fall off the bone'as I had hoped.

The second rack was cooked tonight. I decided to bake this rack. I marinated the ribs for an hour and a half in one bottle of bbq sauce and 8 (bbq sauce) bottles of water. After cooking, I placed in the oven for 40 minutes to bake. Result...FALL OFF THE BONE delicious!

Next month I will try the slow cooker!

French toast eggs!

A recent favorite among the kids and myself are French Toast Eggs! Just mix a couple of eggs (or egg whites for me), a couple tablespoons of milk, a couple teaspoons of cinnamon and then scramble or make omelet style. Add some honey as a topping and you have a yummy breakfast!

Dirty snack!

Mud pudding! The kids love it. Pudding (usually chocolate, but we used vanilla). Crushed Oreos on top. A few gooey, I mean gummy, worms! Hide some in the pudding!!

Feta and spinach stuffed chicken

I found this recipe on Pinterest, but made up my own recipe because I just needed one chicken breast, not 4 like the recipe called for. Anyway, threw some feta, spinach, thyme, garlic and lemon juice together, stuffed it in chicken, salted and peppered the chicken and 40 minutes later.... Yum!

Spinach, feta, mozzarella bites.

I have been wanting to make these for a while now. I found the idea on  Pinterest (where I find most of my recipes and ideas).  For something basic like this, I don't usually follow a recipe. Basically, crescent dough, feta, cooked, chopped spinach, and mozzarella. I used an even amount of the cheeses and spinach (about 1/4c each). I got a tub of crescent dough and cut triangles. Cut, fill, roll and voila!! I added some egg wash on top to get the golden look.

I made them bitesize in hopes that I could get the kids to eat them without wasting too much.

The only change I would make for next time us I may decrease our eliminate the mozzarella. It takes away from the feta and makes the roll too cheesy for me.

Egg and Avocado Pizza

Breakfast yummies! 1/2 an avocado with a pinch of garlic salt. A fried egg. Flatbread!

Slice in triangles like you would a pizza and you have a delicious meal!

Post 1: The all important Pumpkin Pancakes!

The following recipe will be, by far, the best pancakes you have ever eaten! Be warned: Once you try these, you may not go back to the regular plain ol' pancakes again...
Pumpkin Pancakes
2 eggs (beat for 5 min. until thick and lemon colored) I honestly only beat them for a minute or two.

Add all the following ingredients:
1 cup milk
1/2 cup pumpkin
1 3/4 cup Bisquick
2 tbsps sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4 cup Veg. oil

Top with Whipped Cream, Syrup and a little Cinnamon and ENJOY! (I sometimes eat these plain!)

Pumpkin pancakes take slightly longer to cook than normal pancakes, so be patient!  Recipe makes about 15-20, 4 in. pancakes.
